RECIPES
Fluffy Thick Homestyle Pancakes
1 1/2 C Flour 1 1/4 C Milk
3 1/2 tsp Baking Powder 1 Egg
1 tsp. salt 3 Tbsp. Butter/Melted
1 Tbsp. Sugar
In a large bowl, sift together flour, baking powder, salt, and sugar. Make a well in the center and pour in the milk, egg, and melted butter; mix until smooth. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 C. for each pancake. Brown on both sides and serve hot. Makes 8 servings.
Simply Parmesan Chicken Recipe
1/2 C Dried Bread Crumbs
1/2 C Grated Parmesan Cheese
2 tsp Italian Seasoning
1 Egg, beaten
5 Skinless, Boneless Chicken Breast
Preheat over to 350 degrees F.
In a medium bowl mix together the bread crumbs, italian seasoning and parmesan cheese. Dip chicken breast in egg, then in bread crumb mixture to coat. Place coated chicken in a 9 x 13 inch baking dish.
Bake in the preheated over for 30 -35 minutes or until juices run clear, turning over chicken 5 minutes before removing from oven.
Cinnamon Grands Recipe

Preheat oven to 350 degrees. Combine Cinnamon and Sugar and mix it together, set it aside. Coat grands in butter then dip them in the cinnamon sugar mix on both sides. Place on a greased baking sheet. Bake in the oven for 14 minutes.
Hash-Brown Casserole
Start out by adding 1 – 32 ounce bag of hash-browns to a large mixing bowl.
Next add 2 – 10 3/4 ounce cans of cream of potato soup.
Followed by 16 ounces of sour cream.
Now comes the cheesy part. Toss in 2 cups of sharp cheddar cheese.
And 1 cup of fresh grated parmesan cheese.
Next add a good-sized pinch of salt and pepper, and that’s it. Mix it until combined.
Put the mixture into a buttered Pyrex. Don’t smooth out the surface, you want it to be messy and a little jagged on top. All those peaks will brown and get crunchy.
Run this wonderful concoction into a pre-heated oven at 350′ for 1 hour

3 Ingredient Berry Cobbler
Ingredients
Two 12-oz bags frozen mixed berries
1 box white cake mix (no pudding)
1 can of diet 7-up, sprite or sierra mist (clear soda)
Instructions
Place frozen fruit in a 9x13 baking dish. Add dry cake mix over the top. Pour soda slowly over cake mix. DO NOT stir the cake mix and the pop - this will give you a 'crust'. If you stir the two, you will hsve a cake like topping.
Bake 350 for 45-50 min.
You may be able to use frozen peaches instead of mixed berries.

Fiesta Chicken
Ingredients:
Rice
2-3 Chicken breasts
1 small jar of salsa (mild, medium or hot)
1 jar of Ragu cheddar sauce (found with the spaghetti sauces)
Hot sauce - optional
Dice and cook chicken in a large skillet. Drain. Add salsa and cheese sauce to the pan, mix and heat through. Add hot sauce to taste, if desired. Serve over the rice

Silly Spaghetti
1lb ground hamburger
12 oz any pasta. I use elbow macaroni
1 jar spaghetti sauce
1/3 of a 2lb Velveeta a block
Shredded cheese
Boil noodles until tender and drain
Brown hamburger and drain/salt and pepper
Cube Velveeta
Mix hamburger, noodles, and sauce in a 9X13 baking dish. Incorporate Velveeta cubes, and top with shredded cheese

Firecracker Shrimp
1/2 cup apricot preserves
1 tsp vegetable oil
1 tsp soy sauce
1/2 tsp red pepper flakes (I use chipotle)
1 lb. large, uncooked shrimp (peeled and deveined)
combine first four ingredients in a bowl
place shrimp onto skewers
grill or broil shrimp on each side until pink, basting the shrimp with the mixture throughout the process

Those Potatoes
4-6 russett potatoes, depending on size.
1/4 cup milk
1 stick of butter or spread
1 package of cream cheese
1-2 cups of cheddar cheese (depending on how much of a cheese love you are)
** you can optionally add chives, diced cooked bacon, or bacon bits to this if you want
peel and boil potatoes
mash potatoes and whip with the milk, butter, cream cheese, half of the cheddar cheese, and any other optional ingredients (I use my kitchen aid for all the mashing and whipping)
place in a casserole dish, top with remaining cheese and bake at 350 until cheese it melted.

Green Bean Casserole
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or Healthy Request®)
1/2 cup milk
1 teaspoon soy sauce
Dash ground black pepper
4 cups cooked cut green beans
1 1/3 cups French's® French Fried Onions
Stir the soup, milk, soy sauce, black pepper, beans and 2/3 cup onions in a 1 1/2-quart casserole.
Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling. Stir the bean mixture. Sprinkle with the remaining onions.
Bake for 5 minutes or until the onions are golden brown.

EASY Green Chili Chicken Enchiladas
1 rotisserie chicken
1 can of green enchilada sauce
grated cheddar cheese
corn tortillas
Directions...shred the chicken...add chicken & cheese to 1 tortilla & roll up...continue to make as many as you want. Once you have them all rolled pour the sauce all over the top & cover with cheese. Put in the oven until cheese is melted & done!

Buffalo Chicken Dip
4 boneless skinless chicken breast halves, cooked and shredded
1 cup buffalo wing sauce
1 cup mayo
1 cup sour cream
packet ranch
3 cups shredded cheddar cheese
Mix all together leaving out 1 cup of cheddar cheese. Put remaining cup of cheddar on top and bake for 20 minutes at 350. Serve with tortilla chips.

Easy Crockpot Chicken
in a crock pot add 3 chicken breasts 2 cans of died green chilies 1-2 cans cream of mushroom soup and cook about 6 hours. this can be served as is, over rice or turned into creamy enchiladas.

Taco Salad
bag of Doritos
can of red kidney beans

Spicy Ranch Chicken Sandwiches
4 Boneless, Skinless chicken breasts
1 bottle of Franks Hot Sauce
1 package of Ranch mix
Place chicken in one layer in a corning ware dish. Mix hot sauce and ranch mix together. Pour over top of chicken, cover and heat in microwave for 20 mins or until chicken is done. Shred and serve on hoagies, salad or however sounds good to you. Can also be done in crock pot on low for 6 hours
I like to serve mine on buttered and toasted french rolls as hoagies.

Quick Chicken Salad
2 (12.5 oz) cans of chicken ( or3 cups diced cooked chicken)
3/4 cup light mayonnaise
1 cup red grapes, halved
1/2 cup diced apple
salt and pepper to taste
Serve on rolls, bread, or croissants. Sprinkle with some cashews or pecans. This can also be served on a lettuce leaf.

CHICKEN lettuce wraps
take left over chicken wraps from bbq. shread them, throw them in a pot add more bbq sauce and alil hot chili peppers if you like spice, cook for about 5 min until heated. THEN take a piece of lettuce and fill with about 5 oz of chicken and any other toppings you would like ( i typically top with ceaser dressing a lil parm cheese and olives) and then roll it up)

2 Ingredient Punch (Mock Champagne Punch)
1 (2 quart) bottle white grape juice (any brand)
1 -2 liter ginger ale (i use canada dry diet ginger ale, you can't tell it's Diet)
(optional garnish: raspberries (optional), blackberry (optional), strawberry, cut in half with the green stem still attached (optional), blueberries (optional)
Directions:
1. Place white grape juice and ginger-ale in refrigerator overnight or until well chilled. Placing them in the freezer for a couple of hours before serving will make them 'icy' and everyones favorite.
2. In a serving picture or punch bowl, pour equal parts white grape juice and ginger-ale. Stir gently. Fill each glass, and if you want garnish with frozen fruit.
3. Optional Garnish: On a lined cookie sheet, place the fruit(s) in a single layer but not touching, into the freezer for several hours until frozen (or overnight). After they are completely frozen, they can be bagged together as long as they stay in the freezer so they don't stick together. Then use one of each fruit to garnish each glass. It is beautiful and also keeps it colder longer and doesn't water down the flavor.
Banana Bites
- Use firm bananas and cut into 1 inch sections. Leave the peel on for easy handling, and with a melon baller, dig a well in the middle of each banana section.
- Melt chocolate in the microwave and dip the bottom portion of the banana in chocolate and then dip it once again in either non-pareils or chopped peanuts. To quickly harden the chocolate, place dipped bananas in the freezer for five minutes.
- Fill each well with ice cream (I filled mine with vanilla chocolate chip) and top with whip cream and a maraschino cherry.
Chocolate Peanut Butter Pretzel Bars
Makes 9 medium or 16 small bars
To make the pretzel crumbs, pulse pretzels in a food processor until the largest pieces are about pea-sized. I used almost half a bag of Snyder’s “Snaps” to get 1 1/2 cups of crumbs.
Peanut Butter Base Ingredients
6 tablespoons unsalted butter, melted
3/4 cup peanut butter
1 1/2 cups pretzel crumbs, fine
1/2 cup confectioners’ sugar
1/4 teaspoon salt

Chocolate Ganache Ingredients
1 heaping cup semisweet chocolate chips, such as Ghirardelli 60% chocolate chips
1/3 cup heavy cream
1/3 cup heavy cream
Directions
Line 8×8 pan with foil. Spray with baking spray.
In a medium microwave-safe bowl, melt peanut butter and butter together in microwave (about 1 minute on HIGH). Stir in pretzel crumbs, confectioners’ sugar and salt. Spread evenly into prepared pan and refrigerate at least 10 minutes.
In a small saucepan or microwave-safe container, heat heavy cream to near boiling (1-2 minutes on HIGH, depending on your microwave). Pour over chocolate chips. Let sit for 2 minutes. Stir until chocolate is melted and smooth. (If needed, microwave on DEFROST 10 seconds at a time to finish melting.) Pour chocolate over chilled peanut butter base. Chill.
Refrigerate for at least 1 hour before cutting. Lift foil to remove from pan, then slice into bars with a pizza cutter. Store in refrigerator.
Make Your Own Play-Doh Recipe
Don’t want to cook your playdough on the stove? Use a microwave!
1 cup of water
1 cup of flour
2 teaspoon of cream of tartar
1 tablespoon of cooking oil
1/2 cup of salt
Food coloring
1 cup of flour
2 teaspoon of cream of tartar

Mix all of the ingredients, except for the food color. Microwave it for about one minute and stir. Cook for about 30 more seconds. Keep repeating until the playdough is dough-ish. Knead the playdough and place the food coloring in. Its that simple!
Cookie Dough Truffles
1/2 cup softened salted butter
3/4 cup light brown sugar
1 tsp vanilla
1 (14oz) can of sweetened condensed milk
2 1/4 C flour
1/2 cup mini chocolate chips
So easy:
combine (in a bowl,) the butter, sugar,vanilla,and sweetened condensed milk. Add the flour and chocolate chips.
Now, you may be able to form this into balls at this point. I however, could not- I think it’s the summertime in Florida problem. That’s why we have refrigerators. Chill your dough if you need to. Maybe a half hour. Roll into walnut sized balls. Place balls in the freezer for 2hrs.
Melt 12 oz chocolate chips with 1 tbs shortening or butter. To melt, place in a microwave at 25 second intervals, stirring between each. Be careful- overheated chocolate can seize up. Just get it till it’s starting to melt and stir away, the chocolate will continue to melt and smooth out. My little tip. I have ruined a lot of chocolate in my days.
Now, you can dip the balls using a spoon- or fill pastry bags with the melted chocolate and drizzle. You don’t have pastry bags? Okay, in this instance a plastic bag should work. But, next time you see some of those disposable pastry bags…get them. They are so worth it. So, drizzle or dip and store these babies in the fridge.
No Bake Chewy Cookies and Cream Bars
1 bag of Oreo Cookies
1 Bag of Marshmellows
2 T of Butter
Place oreo cookies in a food processor or blender and mix until ground.
Melt the butter and marshmellows until puffed in a large bowl or saucepan. If you do it in a saucepan make sure you constantly stir and do it over low-medium heat to not burn them.
Pour in the ground cookies and mix together.
Transfer into an 8x8" Baking Dish and let sit for 10 min
Warm Toasted Marshmallow S'more Bars
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1 cup graham cracker crumbs
1 cup butter or margarine, melted
3 cups milk chocolate chips (18 oz)
4 1/2 cups miniature marshmallows
1. Heat oven to 375°F. In large bowl, stir together cookie mix and crumbs. Stir in melted butter until soft dough forms. Press into ungreased 13x9-inch pan.
2. Bake 18 to 20 minutes or until set. Immediately sprinkle chocolate chips over crust. Let stand 3 to 5 minutes or until chocolate begins to melt. Spread chocolate evenly over crust.
3. Set oven control to broil. Sprinkle marshmallows over melted chocolate. Broil with top 4 to 5 inches from heat 20 to 30 seconds or until marshmallows are toasted. (Watch closely; marshmallows will brown quickly.) Cool 10 minutes. For bars, cut into 6 rows by 4 rows. Serve warm. Store any remaining bars tightly covered.
Snickerdoodles
Mix together:
1 C. Shortening
1 1/2 C. Sugar
2 Eggs
2 3/4 C of Flour
2 tsp. Cream of Tarter
1 tsp. Baking Soda
1/2 tsp. Salt
Mix and roll into balls. Roll balls into cinnamon/sugar mixture. Bake at 400 degrees for 8-10 minutes.
No Bake Cookies
2 C. Sugar
1 Cube of Margarine
1/2 C Milk
1 Square of Baker's Chocolate
1/2 C Peanut Butter
3 C Oats
1 tsp Vanilla
Combine the sugar, margarine, milk, and baker's chocolate in a saucepan. Bring to a boil for 1 min. Then add 1/2 C of Peanut Butter, 3 C Oats, and 1 tsp of vanilla. Drop them on a plate or cookie sheet by the spoonful and eat!
Cresent Turkey Rolls

8 oz. Cream Cheese
2 T Butter
4 T Milk
Salt/Pepper

Pillsbury Cresent Rolls
Preheat oven to 375 degrees. Mix turkey chunks with cream cheese and milk. Spoon out onto cresent roll. Roll up and dip into butter than bread crumbs. Place on a cookie sheet. Bake for 10 minutes. Sprinkle gravy over rolls when hot.
Jennifer Peter's Award Winning Cake
1 Box of Cake Mix
5 Eggs
1/2 C. Flour
1/2 C. Vegetable Oil
1 1/2 C. Water
1 Package Pudding Mix
Mix all together. Bake at 350 degrees for 35 minutes.
Cinnamon Rolls
2 C. Warm Water
1/3 C. Sugar
1/2 C. Vegetable Oil
2 T Yeast
1/2 T Salt
5 1/2 C. Flour
2 Eggs
Mix in a bowl the warm water, sugar, vegetable oil and yeast then let sit for 15 minutes. Then add the rest of the ingredients and stir until ingredients are well mixed. Roll out in a rectangle to about 1/4" thick. Spread melted butter and cinnamon/sugar mixture onto the dough. Roll up and cut about 1 1/2" thick slices. Put on a greased pan and let rise for 10 minutes. Bake at 425 degrees for 10-12 minutes. (brown on top) Frost after cooling.
For the Glaze:
4 ounces cream cheese, room temperature
1 cup powdered sugar
1/4 cup (1/2 stick) unsalted butter, room temperature
1/2 teaspoon vanilla extract

I remember my mom always making these for me. They are so easy and a great lunch to serve that looks like it took time. So yummy! So easy!
Bagel
1 Can of Tuna
Mayonnaise
Shredded Chedder Cheese or whatever cheese you prefer....
Drain tuna then put in a bowl. Add mayonnaise to tuna where it is chunky and smooth and easy to mix. Put the tuna/mayo mixture on your bagel and top with cheese. Put it in the microwave for 1 minute to 1 minute 30 seconds. Voila!
Chewy Peanut Butter Bars
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
3/4 cup REESE'S Creamy Peanut Butter
2 cups all-purpose biscuit baking mix
1 teaspoon vanilla extract
About 1/4 cup sugar
Heat oven to 375°F. Remove wrappers from chocolates. Beat sweetened condensed milk and peanut butter in large bowl until smooth. Add baking mix and vanilla; blend well. Shape into 1-inch balls; roll in sugar. Place 2 inches apart on ungreased cookie sheets. Bake 6 to 8 minutes or until very lightly browned (do not overbake). Remove from oven; immediately press chocolate piece in center of each ball. Remove from cookie sheet to wire rack. Cool completely. Store in tightly covered container. About 48 cookies.
This is super easy to make and cheap! You could make your own dough, but I prefer the shortcut of using Rhodes rise and bake dough. This is one of my favorite shortcuts to make a nice loaf of bread or use in recipes like this one.
As I said, this is extremely basic. All you need is one Rhodes loaf (or however many you prefer), ground beef (if you’re baking one loaf it won’t hold any more than 1/2-3/4 lb), pepperoni, pizza sauce and your choice of cheese.
The dough takes a few hours to rise, so I take it out in the morning and place a towel over it. Once it has risen, you spray a cookie sheet and press out the dough into a large rectangle.
If you are in a time-crunch the dough doesn’t have to rise all of the way, but it is easier to work with and the finished product will be fluffier if you let it rise for a few hours.
Then you spread out the sauce, lay the meats down, followed by the cheese.
Then with a pizza cutter, start cutting about 1 inch thick strips down the whole rectangle. You want to make the strips on each side the same size and make sure you have the same amount, like the first picture. Don’t get frustrated your first time, it takes a few times to get the braiding down.
Follow the pictures above. You take the first strip and pull it down to the second strip on the other side. You then take the first strip on the other side and do the same. Keep braiding all the way down and make sure to tuck in the ends or the sauce will spill out during baking.
A few minutes before it’s done I brush with olive oil and sprinkle with oregano. I then bake at around 325 until golden brown.
Creamy Lemon Cheesecake Pie
2 pkg. (8 oz.) PHILADELPHIA cream cheese, softened
1/2 C Sugar
1/2 C. Sour Cream
1 Tbs of Fresh Lemon Juice
1 tsp. Grated Lemon Peel
2 Eggs
1 Honey Maid Graham Pie Crust
Preheat oven to 375 degrees. Beat cream cheese in bowl of electric mixer on medium speed until creamy. Add sugar; beat until well blended. Add sour cream, lemon juice and peel; mix well. Add eggs, 1 at a time, mixing on low speed after each addition just until blended. Pour mixture into pie shell. Bake 35 to 40 minutes or until center is almost set. Cool completely on wire rack. Refridgerate 4 hours or overnight.
1 package (10 oz., about 40) regular marshmallows
- OR -
4 cups miniature marshmallows
6 cups Kellogg's® Rice Krispies® cereal
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Make sure to constantly stir so the marshmallows don't burn. Remove from heat. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.
2. Using buttered spatula or wax paper, evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into eighteen 3 x 2-inch bars. Push one stick into the bottom of each bar.
(I personally have a hard time cutting rice krispies. I found if you pull of a piece and roll it into a ball in your hand then form it into a rectangle works best then stick it on a popsicle stick.
3. In small microwave-safe bowl combine chocolate morsels and oil. Microwave on high for 1 to 1 1/2 minutes, stirring every 30 seconds. Dip bars into chocolate and decorate as you like. Place on wax paper lined baking sheet. Refrigerate until chocolate is set. Best if served the same day.
